Chocloate Covered Cantaloupe

4 - cantaloupe slices cut into 1 inch wide strips (about 1/2 of a 2 lb. cantaloupe)
2 - small bars of organic dark chocolate (about 1.5 ounces each)


In a double boiler, melt the dark chocolate. While the chocolate is melting, cover a cookie sheet with wax paper or parchment paper.  Slice and dry the cantaloupe with a paper towel.  Skewer the cantaloupe from the end with a bamboo skewer.  When the chocolate is melted, remove the chocolate from the heat and dip the cantaloupe slices into the chocolate to coat.  Lay the chocolate covered cantaloupe on the wax or parchment paper to cool. Refrigerate for at least half an hour to harden the chocolate.  Enjoy!


Did you know that dark chocolate may reduce high blood pressure?  Many people who have high blood pressure are recommended to increase potassium.  Cantaloupe has more potassium than bananas.  (By the way, bananas are also delicious covered in chocolate!)

You can also use fresh pineapple chunks, strawberries, bananas, or mango. Be creative!
