Southwest Salad

Directions:

Prepare the base of the salad (lettuce/greens) in a large bowl. Prepare as many of the add-ins as you like and add to the lettuce greens.

Mustard Vinaigrette Dressing:

Prepare the mustard vinaigrette dressing in a separate small bowl.  Blend salad dressing ingredients until the oil is emulsified.  Dress the salad with the vinaigrette dressing just before serving and toss well.  Garnish with dried oregano or fresh minced parsley.

Yields

Depends on the number of add-ins. Count on 1 to 1 1/2 cups per person for a side salad or 2-2 1/2 cups as a main meal.

Ingredients

Mustard Vinaigrette Salad Dressing:

  • 3 tablespoons white or red wine vinegar (my personal favorite is to mix 1 T balsamic vinegar with 2 T red wine vinegar) 
  • 1 clove of garlic minced
  • 1/3 cup of olive oil
  • 1-2 teaspoons Dijon mustard
  • optional:  1 shallot finely minced

Salad:

  • 2 cups spring greens or chopped romaine lettuce or prepackaged lettuce greens, rinsed thoroughly

     Add-ins as desired; ¼ cup each (or a generous handful):

    • Organic corn
    • Chopped red, yellow, or green pepper
    • Very thinly sliced red onion
    • Sliced cucumber
    • Grape tomatoes or halved cherry tomatoes
    • White or black kidney beans or garbanzo beans,rinsed
    • Black olives, sliced
    • Shredded carrots
    • Pine nuts or pumpkin seeds
    • Feta cheese, crumbled or shredded cheddar cheese
    • Jarred sliced jalapeno pepper, rinsed
    • Sea salt and pepper to taste
    • Garnish with dried oregano basil or fresh minced parsley
    • Jarred artichoke hearts quartered

    Directions

    Blend the salad dressing ingredients in a small bowl and set to the side.

    Combine the salad greens in a large bowl with your desired add-ins and toss together well.  Dress the salad just before serving and garnish with dried herbs and shredded cheese. 

    Notes

    This salad is so versatile and a very colorful addition to any meal.  I'll often make a big bowl of the base to use for the next couple of days and add different add-ins each day.  If you are in a hurry, you can use a prepared package of lettuce greens, with frozen organic corn, canned beans (make sure to rinse them), grape tomatoes, black olives, packaged cheddar cheese and you are done.  It doesn't have to be hard.  If you have a little time, adding some crunch in the form of fresh red or green pepper or adding some of the other add ins gives the salad a little more texture and interest.
