Strawberry Walnut Salad

This is a delightful spring/summer salad recipe that will please everyone.  Feel free to use other berries if the strawberries are not out yet.


Raspberry Vinaigrette Dressing

  • 3 tablespoons raspberry vinegar (if you'd like to add a little more tartness to the dressing, replace 1 tablespoon of raspberry vinegar with 1 tablespoon of white wine vinegar)
  • 1/4 cup walnut oil or olive oil
  • 1 teaspoon honey mustard 


  • 1 package of mixed spring greens or baby kale, thoroughly rinsed and dried
  • 1 pint of fresh organic strawberries hulled and sliced
  • 1/2 red onion thinly sliced
  • 1/4 cup chopped walnuts or pecans
  • about 1/4 cup  of crumbled bleu cheese or feta cheese


Raspberry Dressing:

Blend all of the ingredients in a small bowl and whisk until the oil is emulsified.


Place the salad greens in a large salad bowl.  Add the sliced strawberries, onion slices, nuts and cheese and toss thoroughly.  Dress the salad immediately before serving.   


Feel free to replace the strawberries with other berries or fruit.  This salad is delicious with raspberries, black berries, blueberries or even sliced pineapple or cantaloupe.
