Zucchini Noodles

Spiralize 2 zucchini

Mince 2-3 cloves of garlic

Grate 1/4 Parmesan cheese

Cooking Time

5-10 minutes

2 tablespoons of grass-fed butter or olive oil

3-4 cloves of garlic, minced

2 zucchini, spiralized

1 large sweet onion, sliced

1 sweet red pepper, sliced

1/4 cup of grated Parmesan cheese

sea salt and pepper to taste


Heat a large saute pan over medium heat.  Add butter or olive oil.  When the fat is heated, add the sliced onion and minced garlic and caramelize for about 4-5 minutes.  Add the remaining vegetables (the spiralized zucchini, the red pepper) and cook until the vegetables are soft but not mushy, about 2-3 minutes. 

Remove the pan from the heat and add the Parmesan cheese and season with sea salt and pepper.  Enjoy!


These noodles made a delicious accompaniment to a protein or serve as a spaghetti replacement (double the recipe).
