Cauliflower Rice Bowl

Ingredients

Base: 

  • 1/2 to 1 cup cauliflower rice (cooked according to directions) Can substitute brown rice if desired.
Add any or all of the following (be creative):
  • Organic grape tomatoes
  • 1/2 sliced avocado or large dollop guacamole
  • 1/2 chopped organic red pepper
  • 1/4 sliced organic medium cucumber
  • 1 large dollop hummus
  • 1/2 cup baked cubed sweet potato
  • Italian dressing to taste
Add Protein of choice:
  • 1/2 canned wild salmon or 
  • 1/2 baked chicken breast or 
  • 3-4 falafel
  • 1-2 large hard boiled eggs
  • 1/4 cup garbanzo beans (rinsed)

Directions

Prepare cauliflower rice as directed and place as a base in a bowl. Top with any or all of the ingredients. I tend to use previous nights’ leftovers and add tomatoes and sweet peppers for a dash of color. 

Serve in individual bowls and garnish with chives or parsley. 


Notes

This recipe is deliciously easy and can be made mostly from last night's leftovers.
