Base:
Prepare cauliflower rice as directed and place as a base in a bowl. Top with any or all of the ingredients. I tend to use previous nights’ leftovers and add tomatoes and sweet peppers for a dash of color.
Serve in individual bowls and garnish with chives or parsley.
This recipe is deliciously easy and can be made mostly from last night's leftovers.
