If the fish is frozen, place in the refrigerator the night before

4 pieces of halibut or mahi mahi
1-2 tablespoons of organic coconut oil
lemon pepper
4 cups of spring greens or baby spinach
Lemon mustard vinaigrette dressing
Heat a large skillet over medium heat and melt 2 heaping tablespoons of organic coconut oil in the skillet while preparing the fish.
Pat the fish dry and place the fish on a clean, flat surface. Generously sprinkle the top surface of the fish with the lemon pepper. Place the seasoned side of the fish down on the heated skillet and cook for about 4-5 minutes. While the fish is cooking, season the other side of the fish with lemon pepper. When the fish is browned on the bottom, flip the fish to cook on the other side until browned, for another 3-4 minutes.
Prepare 4 plates each with a bed of spring greens or baby spinach. Place a piece of fish over the greens on each dish and dress with lemon mustard vinaigrette dressing. Hint: Any scrapings from the pan are delicious poured over the fish.
