Directions:
Prepare the base of the salad (lettuce/greens) in a large bowl. Prepare as many of the add-ins as you like and add to the lettuce greens.
Mustard Vinaigrette Dressing:
Prepare the mustard vinaigrette dressing in a separate small bowl. Blend salad dressing ingredients until the oil is emulsified. Dress the salad with the vinaigrette dressing just before serving and toss well. Garnish with dried oregano or fresh minced parsley.

Blend the salad dressing ingredients in a small bowl and set to the side.
Combine the salad greens in a large bowl with your desired add-ins and toss together well. Dress the salad just before serving and garnish with dried herbs and shredded cheese.
This salad is so versatile and a very colorful addition to any meal. I'll often make a big bowl of the base to use for the next couple of days and add different add-ins each day. If you are in a hurry, you can use a prepared package of lettuce greens, with frozen organic corn, canned beans (make sure to rinse them), grape tomatoes, black olives, packaged cheddar cheese and you are done. It doesn't have to be hard. If you have a little time, adding some crunch in the form of fresh red or green pepper or adding some of the other add ins gives the salad a little more texture and interest.
